Tomato bruschetta

Simple, quick yet satisfying and healthy recipe for tomato relish that can be used for dips, bread / pizza toppings. We like ours ala bruschetta style.

Serves 2

Ingredients:
1 large tomato or about 6-8 cherry tomatoes
Olive oil (about 2 tsp)
Sea salt
Freshly ground black pepper
Dried parsley / coriander
Few drops of balsamic vinegar

Directions:
1. Dice the tomatoes up to chunky bits. You can use a blender but remember not to overblend.

2. Add olive oil, salt, pepper, dried parsley/ coriander, balsamic vinegar to taste.

3. Serve on well toasted ciabatta or toasted wholemeal bread.

We like to complement it with Spanish Jamon :)
